Does the Golden Color of Brik Hide Carcinogenic Substances?
The baking of brik in the oven is not without health risks, warns Rania Ghiloufi, a specialist in food safety and quality and director of the food technology laboratory at the National Zouheir Kallel Institute of Nutrition and Food Technology. According to her, the appearance of crispiness and yellow color during baking is a sign of the formation of substances classified as carcinogenic. In a television interview with the Tunis Afrique Presse Agency, the specialist explained that this phenomenon concerns not only brik but also other starchy foods. The crispiness and golden color, often sought after for their aesthetic and gustatory appeal, actually reveal the presence of new substances that are potentially hazardous to health. Although baking in the oven is less harmful than frying, Rania Ghiloufi emphasizes that the consumption of these products should remain moderate. She recalls that reducing the frequency of preparing fried or heavily baked foods is possible and recommended, even if completely eliminating these practices is difficult. The side effects of these culinary habits appear gradually, cumulatively over the years.
