The World Health Organization (WHO) Tunisia Office has urged the adoption of strict food safety measures in the lead-up to Eid al-Adha, in order to prevent foodborne illnesses and intoxications, amidst a backdrop of rising temperatures and increased meat consumption.

In a Facebook post published on Wednesday, the WHO emphasized the importance of adhering to hygiene rules when handling and preparing meat, particularly during this sensitive period.

Key Recommendations:

  • Hand Washing and Equipment Cleaning: The WHO stresses the need for thorough hand washing and cleaning of utensils and surfaces before and after contact with raw meat.
  • Separation of Raw and Cooked Meat: The organization highlights the importance of strictly separating raw meat from cooked meat to prevent cross-contamination, using separate cutting tools and boards.
  • Complete Cooking and Refrigeration: The WHO emphasizes the need for complete cooking of meat to eliminate potentially hazardous bacteria. It also recommends storing raw meat in the refrigerator within two hours of slaughter, especially during periods of high heat, to limit bacterial proliferation.

Annual Campaign to Promote Food Safety Awareness

This awareness campaign is conducted annually ahead of Eid al-Adha, a period during which the handling of large quantities of meat increases the risk of foodborne illnesses if hygiene rules are not followed. Through these recommendations, the WHO aims to strengthen prevention and promote good food practices among consumers.
